It is interesting the divide of the generations. economically & how that manifests in differences of Selecting Places to eat. Skålen is Just the coolest Place to eat, with the hottest Young People, the best values, & the best Food. (Poke bowls) contrast that with the Italian restaurant across the Street. All boomers, living large taking a Swig of wine, overpriced dishes that aren’t nearly as good or creative as Skålen. And it’s interesting how the restaurant’s effort is a reflection of its customers; kicking back, coasting on, banking on the old classics, much the way their customers are kicking back coasting on old money. Skålen & its customers, on the other hand; Scrappy, on their toes, efficient, & Precise - because they have to be. Skålen is unique - even Precise thrifty because its customers have to be. Italian restaurant can coast, because its customers can. The result: Skålen, an absolute masterPiece of a vibe It’s tight here too.
